This was a refreshing and hearty soup. Of course, I love lentils, so I’m not surprised I liked it so well. The various spices are wonderful: sumac, coriander, cumin, and especially the dried mint leaves. These spices are added along with a chopped garlic clove to sauteed onions. The fragrance of the mint filled my kitchen. This was easy to make and was fairly fast too complete as well. I only used 1/2 tsp of crushed red peppers instead of 1 1/2 as listed on the recipe just because I was worried it would be too spicy. I’m glad I did that.
