This recipe is tasty and filling. It is taken from America’s Test Kitchen, The Complete Mediterranean Cookbook. The recipe calls for some of the vegetables to be oven roasted, and others sauteed. I used a Dutch oven because the dish starts on the stovetop, then goes into the oven.
